One of my most favorite things to eat are PANCAKES – for breakfast, lunch and even dinner. In the US, my friends and I spent many late nights eating at IHOP just laughing hysterically, dancing to their lame playlist and gobbling the many pancakes we ordered knowing damn well we would never be able to finish them…
Many belly aching laughs, ugly tears and celebrations have been accompanied by pancakes, even birthday dinners. I have a total of three dishes that I love, all made by the mother trio in my life: My mom’s chicken curry, Aunty Sheryl’s Butter Chicken and Aunty Kogie’s Butternut Soup, and then BAM!!! Carlene Merlino hit me with Swedish pancakes and I have never been the same ever again in my life… So from Carlene, to Bianca, to you…
EASY SWEDISH PANCAKES:
PREP: 10 MINS
COOK: 10 MINS
INGREDIENTS
4 EGGS
2 CUPS MILK
1/2 CUP ALL-PURPOSE FLOUR
1 TABLESPOON SUGAR
1 PINCH SALT
2 TABLESPOONS MELTED BUTTER
DIRECTIONS:
- In a large bowl, beat the eggs with a wire whisk. Mix in the milk, flour, sugar, salt, and the melted butter.
- Preheat your non-stick skillet/pan to medium heat. Pour a thin layer of batter on the skillet. Cook until the top looks dry (batter has started to cook) and then flip.
- Cook for another minute or till golden brown
- Roll each pancake and serve with toppings of your choice, or plain 🙂
